- 1-2 tablespoons of fish sauce (to taste)
- 1 tablespoon of lime juice (to taste)

- Prepare the Broth: In a pot, combine the chicken broth (or water), lemongrass, galangal, and kaffir lime leaves. Bring to a boil over medium heat, then reduce heat and let it simmer for about 5-10 minutes to allow the flavours to infuse.
- Add Chicken & Mushrooms: Add the sliced chicken to the pot and cook until the chicken is no longer pink, about 5 minutes. Then, add the sliced mushrooms and cook for an additional 3-4 minutes.
- Add Coconut Milk: Stir in the Coconut Milk and bring the mixture back to a gentle simmer. Avoid boiling, as this can split the Coconut Milk.
- Season the Soup: Add the smashed chillies and fish sauce to the soup, adjusting to taste.
- Simmer for Another Minute.
Finish & Serve: Remove the pot from heat and stir in the lime juice. Taste and adjust any seasonings if necessary, adding more fish sauce or lime juice as desired.
